This recipe came from old family friends who lived on the shore of Lake Wissota, just outside of Chippewa Falls, Wisconsin. Every summer when I was little, they were kind enough to let us camp in their backyard RV overlooking the lake. A few years ago I made German potato salad for Thanksgiving, and little Grandma shared that she had enjoyed it many years ago, and it brought back good memories.
German Potato Salad
Ingredients
12 medium sized potatoes
1 lb. bacon (+save bacon grease)
2 medium onions, chopped
3 green peppers, chopped
2/3 cup cider vinegar
2 tsp. sugar
Salt and pepper
Peel and dice potatoes, and boil till cooked through. Drain and set aside to cool slightly.
Meanwhile, fry bacon and set aside.
Pour bacon grease into a separate pot. Mix cider vinegar and sugar to grease, mixing well. Saute onions and peppers in this mixture. When cooked, add potatoes and crumbled bacon, and stir well. Add salt and pepper to taste. *This is also when I add extra cider vinegar and sugar to taste, as we prefer a bolder flavor.
This is best served warm.
