We have to make a pile of food to fill up the growing boys around here, but these are great even leftover. However, the ingredients can easily be cut in half to make a smaller batch if desired.
Roasted Ranch Potatoes
Ingredients
- 2 lbs. small red potatoes
- 2 packets of Hidden Valley dry ranch mix
- 1/4 cup olive oil
- 1/2 tsp. salt
Preheat oven to 400°.
Cut the potatoes into 1 inch pieces and place on a baking sheet.
Drizzle olive oil over potatoes and fold potatoes into oil so that they are coated well. Next sprinkle with salt, and stir again.
Then evenly sprinkle potatoes with the ranch mix, one packet at a time, stirring well between each.
Bake at 400° for about 50 minutes, until potatoes are carmelized.
Tonight we enjoyed grilled burgers and brats with these potatoes as a side. Eli takes care of the grilling while I fix sides (have I mentioned how awful I am at grilling?) He uses Kingsford charcoal, and sometimes, like tonight, he throws on a chunk of cherry or apple wood.
Our old stand-by burger seasoning is Lipton onion soup mix (one packet per pound) and a half-and-half mixture of ground beef and venison. Recently we've found that Famous Dave's Rib Rub is a delicious substitute seasoning when we want to change it up.
We all have our favorite ways to fix our burgers. One just likes mustard, another ketchup, mustard, pickles and onions. This is how I build my burger:
From the bottom up: bun, ranch, burger, melted co-jack, bacon, thinly-sliced onion, pickles, BBQ sauce, bun lid. And...I can barely walk now.
