Cheddar Bacon Ranch Chicken Breasts

This simple recipe was one of the "Tasty" videos from Facebook, shared by my dear mother-in-law, and a definite keeper! Recipe and mother-in-law.... The end result didn't look quite the same as in the video, but the taste was phenomenal.

Cheddar Bacon Ranch Chicken Breasts

Ingredients

  • Chicken breasts (I used 3 lbs.)
  • Salt, pepper, onion powder & Montreal Chicken seasoning (optional)
  • Ranch dressing (2 Tbsp. per breast)
  • Bacon to cover each breast (I used a whole pound)
  • Cheddar cheese (I used 3 cups)
Lay chicken breasts in a baking dish. Since the ones I used were still a little frozen yet, I cut slits in each breast to help it bake more evenly. It also helped distribute the seasoning throughout the meat.

Season breasts with salt and pepper. I added Montreal Chicken seasoning and onion powder as well.

Next spread ranch dressing over the breasts.

Then comes the bacon....

And the cheese....

Finally, pop it into a 400° oven for 40 minutes, and enjoy!

I served this delish dish with a side of roasted cauliflower and Portobellos.
